Disney Cruise Line typically sails at capacity or pretty close to it. I have been on a sold out cruise, and I never found any area overwhelmed with people nor crowded.
I've sailed twice and both times the ship was "full", but the only time you really saw alot of people was at the midnight dessert buffet. Other than that people are all over the place, but not in huge crowds
DCL, like Disney, handles crowd control pretty well. The only time it felt crowded on my 7 day Eastern was peak hours at the Mickey and Goofy pools, and maybe on line at buffet lunch during a peak moment (other times the buffet "line" was non-existent!). And the dining rooms get a little noisy.
I have to say, though, I rarely felt "crowded", and my room was very quiet. Great, individualized service from your room steward and wait staff will make you feel like you're the only ones on the ship!
Our ship is full. I got that straight from DCL when I called to enquire about potential upgrades, There were a "few" left. Only 2 ocean views left but she did say they were still booking at lower catagories so maybe quite a few passengers will end up with upgrades? It will be great. Mickey Pool is always crowded but it's really very manageable and hard to tell there are that many people on board.
