How far out do you book your plane ticket?

So Hopper came through for me again - I was able to book 2 economy round trip tickets on United from Newark to Orlando in March for $373! When I went back to check again the next day the exact same tickets were $811!!
What are your dates may I ask.- nice price......we just booked JetBlue down, United back - a few days before Easter for $678 PP. (7 of us).
 
I'm a nervous Type A, and we fly exclusively JetBlue, which I love that they post airfare at 11 months out, too, and book ASAP. JetBlue is also great about canceling the airfare and then rebooking at the cheaper price and the difference goes in your travel bank for the next trip.

I like to have my ducks in a row, everything extraneous (tickets, airfare, GCs) all prepaid and ready to go so I can just get excited about planning ADRs or new things to try, etc.

I tried Hopper and Google Flights, but unless I'm doing something wrong, they only show the cheapest airfare with no bags and not picking your seats. By the time you add in carryon luggage and seat selection, the information seemed irrelevant.
Same! Also, we are typically flying with 6 people, so to get us all the lowest fares, I book as soon as SW releases. If it's just 2 of us, I'm less intense about it and maybe okay with 4 mths out.
 

When you put in your information on Hopper and search for flights there is a choice at the top that allows you to choose basic, standard, enhanced or premium flights - it defaults to all flights.
If you leave it on all flights it will list the cheapest flights but if you click on a flight it opens choices of other levels for that flight and you can change it there.
