How far out can I book the trip itself?

I'm still new to the boards, but have lurked long enough I *think* I'm in the right place.

I know we'd like to go in May of 2011, but how far out can I actually book the trip? and is there a thread that breaks down how you pay - as in, what are my options for multiple payments. I'm sure they have more than just the you pay in full when you book, where can I find that info.
