How does it really work?

My family and I are on the QSDP we arrive on May 12 late 5:30 does our dining plan start that day or not until May 13, also do we have to use our 2 CS meals that day if we have to use them or can we have one left over. I know snacks don't have to be used 2 a day but what about the meals. This is our first trip to Disney so I don't know much about the dining plans. Just wondering if we can use it for dinner when we get there or have to wait until the next day before it kicks in. Thank you from a beginner

All of your credits are there when you check in that first night. The plan/credits are per night of your stay.

As Tricia said you will have access to your credits as soon as you check in. The credits are based on how many nights you stay and can be used in any order per day. So, you could use 4 snacks in one day and none the next day.
