How do you plan if you don't know the hours of events?

We are going to DW in December the 19th thru the 27th. I want to start planning out the trip. You know resturaunts, times to eat, parades and shows we want to see but I am finding it impossible to do not knowing the times for anything in December.. Why do they wait to late to release times? Its kinda bugging me. Any suggestions would be great..
