How do YOU make potato salad?

I have never liked potato salad, mostly because I dont care for mayo. But I saw a little blurb on Rachael Ray that said to try pesto sauce in potato salad. That sounds so good to me, I love pesto! I may try to make some this weekend, and I will let you know how it turns out!
 
I don't do any measuring.

Several potatoes, wash, leave skins on, chunk up, boil, drain, let cool.

Add half a dozen or so chopped, hard boiled eggs.

Add 1 chunked cucumber, 1 chunked green pepper, 1 small diced onion.

Mayo - mustard - salt - pepper. Mix well. Refrigerate. Eat. :)
 
DRY mustard is the key to a kick *** potato salad.

Potatoes, eggs, celery, mayo, salt, and dry mustard. Just a tiny bit goes a long way and it gives great flav. Sometimes I add a little sugar too. MmmMmmMmm

Hmmm. I wouldn't trade in my potato salad for it, but it sounds like a good alternative. Please let us know. DH loves pesto. I'll try that next time we grill, I think.

I also saw a recipe for a ranch potato salad. If anyone wants it, I'll see if I can find it again. I thought my DD would love that. She loves to dip potato wedges in ranch when we go to the local wing place.
 
No measuring here either...

5 lbs of white potatoes boiled with skins on until fork tender
Peeled while warm and cut into chunks
Real mayonnaise
Salt/Pepper and parsley flakes
Bunch of scallions finely chopped
Real Bacon bits

Totally yummie!

Is there fake mayonnaise? :confused3 ;)
 
Ahhh but Miracle Whip is Miracle Whip. They are two entirely different disgusting fatty delicious spreads.
 
I make mine by buying it in the tub at Sams, spooning it out into a serving bowl, and telling people I slaved over it that morning.

Nah, I usually don't lie.

Boiled russets, cut up
Kraft Real Mayo (It is my understanding that Kraft & Hellmans are the same brand, just depends on where you live)
Skeench of yellow mustard
Sliced Green Olives, Red Onion, Celery
Salt and Pepper

I don't like eggs in mine, but do like egg salad:confused3

And I think the reference to "real mayo" means no low fat or fat free, no sandwich type spreads and no generic brands. :scared:
 
well, I to cut up my potaotes before cooking,,,,

Then I add:
potatoes
Cains mayo
mustard
hard boiled eggs
salt, pepper, white vinager.....and sheee...sugar!!!
I got this from my ex mother inlaw, it was the way my ex loved it!
ever since then I have made it this way, because it is always the HIT of the party!!!

I also never measure and go by taste!:)
 
I like it "Japanese style"

boil potatoes, then cube
add thinly sliced cucumber (use a mandoline) that you've mixed with salt, let sit, and squeezed out the excess water
add apple chunks/small slices
add kewpie mayonnaise (from an Asian market, I don't know if Asian sections in the regular grocery stores have it, though).
salt and pepper
I don't remember if my mom puts in celery...maybe...
you can put in diced eggs, too

I know, apple sounds weird, but it only works with the kewpie mayo. We eat it with ikari sauce (japanese worcestershire sauce).

Hellman's = Best Foods

I've had a craving for potato salad for about a week. I think I'll make some ala Weight Watchers. The big difference is just substituting the low-fat Best Foods instead of using the real thing.
 
Step 1.) Ask Chris to take me to Publix or other store.
Step 2.) Go to deli section.
Step 3.) Pick up container and pay at register.
 
I soak some mustard seed and celery seed in a few tablespoons of vinegar overnight. The next day I add that to some mayo to make the dressing. I like chopped eggs and green onions in with the potatoes.
 
You can peel potatos really quick if you boil them whole, drain the water and then put a potato in a dish cloth and twist it- the peel comes right off.

My mom's is different everytime, my one grandma always made hers with French dressing verses mayo. I thought that potato salad was suppose to be redish pink for years!
 
MM, what is "durkees"?:confused:

Durkees is a brand, I think. I see Durkees sauce called for in lots of recipes. I don't think we have it here either.

A-ha..instead of mustard or using dry mustard you can use Durkees.:thumbsup2

It is a salty, mustardy, stuff you find in the grocery store. Probably near the mustards, sauces, etc...

It packs that zest into the potato salad. People eat my potato salad and go, wow this is good.
If you are a "add a dash of mustard" potato salad person, use a dash Durkees instead. Way better....
