how do you know the price

I am on the DDP and I know my meals are covered for the family. However I am trying to budget what tips will cost me.

When you see a price of 36.99 - 59.99 how do you how much your meal will be?

Garden Grill for dinner (2 adults, 1 child)

Same for Crystal Palace breakfast-- shows a price of 15.99-36.99. why such the range? how can I figure it out? Am I missing something?

Character meals and dinner shows (fixed price meals) are expensive. Price variations show the difference between adult and child meals, and in some cases, prices will differ according to whether it is breakfast, lunch or dinner. There are also seasonal variations (an extra $4 per person during some of the main holidays) I always take the highest price as an estimate. If the price is actually lower, then I'm good. No bad surprises.

Most 1 TS restaurants and CS places are a la carte. You can find the menus and prices on this site or over on allears. Take a look and see what your family might like to eat for your meal, and tally it up. Again, since I'm never sure what I might be having, I usually just take a guess at the average price for drinks and dessert, and the most expensive entree.

Add them up and you'll have a ROUGH idea of what you'll need for tips, and you should be a little on the high side.

If you feel that you must have more exact numbers for fixed price meals, you can call Disney dining and ask for specific costs for each.

no that makes perfect sense. Always aim high like we are eating the most expensive appetizer, meal and dessert then if we dont. .the tip isnt as high and its a nice "bonus"
