How do you know emh, late hours etc in advance

I know you can check MDE for early and late hours but we are planning our stay (can't reserve adr until oct) but how do you know that for instance MK will be open for early for example BOG breakfast etc. I just don't want to make plans for something and to find out that we can't get into the park. Does this make sense? This is our first time Booking anything ahead of time. Does Disney plan their hours that advance or am I just crazy thinking about it?
 
Disney World posts their parks' hours well in advance. Right now, the hours are through much of January, 2018. https://disneyworld.disney.go.com/calendars/# That is not to say they never update hours, because they do. So, it can mess with your planning. You can only plan with the information you have and using the site posted above and Disney's site, you'll have the best picture you can get. Happy planning.
 
Disney posts the hours but if you are micromanaging your reservations to try for PPO ADRs etc just know they often change times including swapping EMH etc. So you could look at the calendar at 180 days while booking your meals and find out at 15 days they have added hours or switched what park has EMH or doesn't etc.
 

So the best advice is to go with what you have at 180 days, but then check the calendars at least every couple weeks to see if they have added/changed, so you're not surprised when you get there. Disney can and does change things even up to the day before and day of, so always be ready to be flexible.
