How do you handle special diet needs?

My son is on a diet where he is allowed no red dye in his foods. It really messes up his metabolism sp?, can this type of request be made when ordering food at disney restaurants? And if so how do you go about it? When you are at the restaurant or ahead of time? Thanks
 
If in doubt, call ahead 24 hours. We've found the chefs at Disney's table-service restaurants to be universally cooperative and accommodating with our varied dietary needs, over the years. While we've typically called-ahead, we've actually never needed to, but red-dye isn't something we've had to deal with.
 
Go over to the "disABILTIES!" forum. There is always a lot of discussion on dietary problems and you can get good help there.
 
When you make your reservations you can have the CM make a note. They will also give you (if you ask) the phone number for the chefs at each resturaunt so you can call 24 hours ahead of time. That really isn't necessary though. We did it once, then each time after that we told the hostess when we were seated and the chef came out to our table a short time later. They are all awesome and will bend over backwards to make sure your meal is a perfect as can be.
 

Make a note of it on the reservation and in addition, you can call each restaurant a week or so before your meal.

Dining at counter service places might be more challenging.
