How do you fit in your character meals without missing too much park time?

We did most of ours for an early dinner (5-5:30). I found we really didn't take all that long (around an hour) and we got all of our character pictures and autographs out of the way so we weren't standing in lines waiting in the parks. It worked out great for us and I think we actually saved time by doing it this way.

We prefer dinner.

If we do breakfast it's a late breakfast to be used as a brunch.

If we do lunch we either don't take a mdiday break or just take a shorter midday break.
