How do you cook your Asparagus?

Got some at the supermarket a day or so ago for $1.08 a pound. I was quite surprised that it was that cheap but didn't complain.

I normally steam them and use a little butter/salt.

How else could i cook them? Anyone have any favorites???

Grill it or broil it with a little olive oil drizzled on the top.

My favorite is to cook for about 2-3 minutes in boiling water, cool it and dry it and then mix with a little soy sauce, sesame oil, a pinch of sugar and sesame seeds. Chill it for a bit. Yummy. :)
 
Cook as usual and top with a bernaise sauce....yummy. (But a bit fattening).

Did a search and found this recipe. However you can buy packets (like gravy packets) to make from the supermarket.

Recipe via Meal-Master (tm) v8.01

Title: Bernaise Sauce
Categories: Sauces
Yield: 6 servings

2 tb White wine vinegar 1/4 c Dry white wine
2 tb Tarragon leaves chopped 2 ea Shallots, minced
3 ea Egg yolks 1/3 c Butter
1 x Salt and pepper to taste

Combine vinegar, wine, shallots and tarragon in 2-cup glass measure. Microwave, uncovered, at high for 1 to 2 minutes or until boiling. Set aside to cool to lukewarm. Strain mixture into small bowl; whisk in egg yolks. In 2-cup glass measure or similar microwaveable bowl, melt butter at medium 40 to 60 seconds. Do not boil. Whisk egg yolk mixture into butter. Microwave, uncovered, at medium 30 to 90 seconds. Whisk every 15 seconds. Cook only until mixture starts to thicken. Season to taste with salt and pepper.
 

Usually I steam it too...but my new favorite is to
put some olive oil, finely chopped garlic in a pan, swish the spears in that.. then put salt and pepper.. then put those babies on the grill.. oh yummy!!!!!

I also used Newmans' dressing to swish the spears in prior to grilling.. those were good too. I ADORE ANYTHING with Newmans original dressing on it tho! LOL
 
I usually steam it and then put some spray butter(I can't believe its not butter) on it and sprinkle a little lemon pepper on it.
 
I usually steam asparagus, but for special occassions I garlic roast it. I love my garlic! To make the garlic roasted asparagus, wash and trim the spears. Create a foil "package" and place the spears in it. Drizzle with olive oil, white wine, and toss in a bunch of whole garlic cloves. Seal up the foil package and roast in the oven at 350 for 20-30 minutes, until desired tenderness. It is best to put the foil package on a cookie sheet, in case it leaks. Enjoy! :)
 
I put it in a skillet with just a little bit of water and butter. Cook it until tender. Then squeeze some fresh lemon on it. Yummy!
 
That sounds yummy!

I usually sautee it with Olive Oil and Garlic.
 
I steam it until it's REALLY soft- that's how my 5 year old likes it. No butter, no salt, just asparagus!
 
1. Steam it until it just turns bright green - still kind of crisp.

2. Slice it into 1/4" pieces on an angle. Heat a tablespoon of butter and a little olive oil in a skillet; saute until tender.

Tip: If you bend the asparagus, it will snap at the place where it becomes tough. Throw the bottom half away and only use the top, tender piece.
 
I can't stand the stuff.:eek: My sil loves it and had me grill some for her a time or 2. Drizzle a little bit of olive oil on it, some kosher salt and a dash of pepper.
 
My DH feels the same way about asparagus as you do, Browneyes, but that's okay, it just means more for me! :) It's my favourite veggie.

I usually lightly steam it, add a little butter, salt and pepper, or do it the way Jipsy suggested. :)

Steam it, then put a little bit of fat free honey dijon dressing on it! Yum!
 
Like Saffron, I always steam it and then add a little fat free honey mustard dressing (slightly heated in the microwave) over the top.

VERY good!

Ooooh, this sounds good, I may have to try this, but I'll have to get some white wine. :)

I like to make Asparagus Soup! My family loves it too!

1 bunch of Asparagus, cleaned, chopped in bite size pieces
2 medium onions, chopped
3 tablespoons of olive oil
1 16 oz can of diced tomatoes
water
pasta
salt, pepper (basil leaf ~ optional)

Please give me some slack, I do this all by eye, I'm just guessing at the ingredient amounts.

I sautee the onion in the olive oil until translucent. Then add the asparagus & sautee for about 5 to 10 mins. Then I add the diced tomatos (I once used tomato sauce & it came out good too) & let it simmer for a good 20 minutes. Then I add about 2 cups of water & appropriate amount of any type of small pasta or as I like to call it "soup sized pasta," some salt & pepper & cook till pasta is done. (You can add the basil leaf now for flavor & then I fish it out before serving.) I like mine a little on the thick side so I let it stand for a while before serving.

This is what I normally make on a "we're in a rush" night for dinner since I make the soup during the day & then just throw some pizza bagels in the toaster oven & serve for dinner. Quick easy & yummy dinner.
 
I like asparagus with pasta:

1/2 stick butter
Large onion, diced
Heaping tsp. Minced Garlic
Jar of marinated artichoke hearts
Sundried Tomatoes
Aparagus, diced
Sliced Black Olives
Jar of Pimentos
1/4-1/2 cup cream
grate cheese

Melt the butter and saute the onion and garlic. Add the jar of artichoke hearts ( I usually slice the hearts into more bite-sized pieces) and add the juice from the jar.

Add sliced sundried tomatoes, asparagus, black olives and pimentos and cook until asparagus is tender. Add some cream to thicken the sauce. Serve with pasta of your choice, or chicken ravioli. It is best if the sauce is tossed with the pasta prior to serving. Top with grated cheese of your choice.

This is my own creation. It is delicious and you can substitute, add or omit any of the ingredients listed.

I roast it..drizzle it with a touch of olive oil..yummy!

I made the mistake of trying canned asparagus...yuck!!!
