How did everyone's Fathers Day meals go?

I know several of us were planning on cookouts, or having family over, or whatever... Just wondering how they all went, and your recipes turned out!

Ours went well! You know how i posted about a dessert? Well, DH took matters into his own hand and bought a frozen Oreo pie from the store which rocked, and was super easy! Though I wasn't able to impress MIL on that, I did on other things, and she loved the pie regardless =)

We ended up grilling hot dogs, brats, and burgers. I made a kickin fruit salad (which she was impressed by), deviled eggs, potato salad, baked beans, and iced tea =)

We had a really good time, it went well. I did realize that I need to buy some more entertaining pieces... we haven't been married long, and I never thought I'd use serving pieces, but wished I had more... just something great to ask for for holidays/birthdays!

PS- our "cookout" was mainly indoors because it was SO HOT here, but DH and his dad sat outside by the fire pit in the shade with the stand-up fan from our bedroom plugged into the side of the house! TOO FUNNY to see two men outside with a fan circulating on them. They were determined =)

I myself had a GREAT meal! If anyone wants a delicious steak, and you find yourself in Pensacola, go to Mguires Irish pub. They also have a resturant in Ft. Walton. Super Yummy!

I winged it. I wasn't planning on doing anything but I got up that morning and thought "I should have my dad over for dinner." So I went to Safeway and bought some rib eye steaks. They were just so-so. I did make a homemade Chipotle Macroni and Cheese Casserole that was pretty good (and low fat) plus some cole slaw. I bought (shudder) a cake (spice cake his favorite) and served it with vanilla ice cream.

It was only 75 degrees here on Sunday and we actually got to eat outside. We never get to do that in summer because of the heat/humidity. But Sunday was beautiful.

Lobster-Stuffed Beef Tenderloin with Bearnaise Sauce Recipe courtesy Emeril Lagasse, 2003

2 rock lobster tails
1 tablespoon vegetable oil
1/4 pound pancetta or bacon, chopped
1/2 cup chopped shallots
3 tablespoons minced celery
2 teaspoons minced garlic
4 ounces baby chanterelle mushrooms, stems trimmed and sliced
Salt and freshly ground black pepper
2 tablespoons minced green onions
2 tablespoons dry white wine
1 tablespoon chopped fresh parsley leaves
1 center-cut beef tenderloin, about 3 1/2 pounds, trimmed and butterflied
Steamed fresh asparagus, as accompaniment
Bearnaise Sauce, recipe follows

Preheat the oven to 400 degrees F.
Set up a large steamer. Place the lobster tails in the steamer and steam until just cooked through, about 6 minutes. Remove the lobster tails from the steamer. Cut along the underside of the shell and remove the tail meat whole. Set aside

In a large skillet, heat 1 teaspoon of the oil over medium-high heat. Add the pancetta and cook, stirring, until crisp and the fat is rendered, about 5 minutes. Remove with a slotted spoon. Drain off all but 2 teaspoons of fat from the pan. Add the shallots and celery and cook, stirring, until soft, about 2 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the mushrooms and a pinch each of salt and pepper, and cook until the mushrooms give off their liquid, 3 to 4 minutes. Add the green onions and stir. Add the wine, increase the heat, and cook until it has nearly all evaporated, 1 to 2 minutes. Add the parsley and stir. Remove from the heat, stir in the cooked pancetta, and let cool.

Spread the butterflied beef, cut side up, flat on a surface. Spread the pancetta-vegetable mixture in a line across the meat, about 2 inches from the top, leaving a 1/2-inch border on the sides. Lay the lobster tails on top of the mixture, going across the beef. Pull the top flap over the lobster tails and roll the meat over the stuffing, jellyroll fashion, and tuck in the ends. Tie with kitchen twine every 2 inches.

Place in a large heavy roasting pan, rub on all sides with the remaining 2 teaspoons olive oil, and season lightly with salt and pepper. Place over medium-high heat and sear the meat on all sides, about 6 minutes. Place in the oven and roast to desired temperature, 30 to 35 minutes for medium-rare.

Transfer to a cutting board. Tent and let rest for 10 minutes before carving. Remove the kitchen twine and slice thickly. Place on a platter, surround with the asparagus, and drizzle with the Bearnaise Sauce. Serve immediately.


Bearnaise Sauce:
2 tablespoons chopped shallots
4 sprigs fresh tarragon
1/4 cup dry white wine
1/4 cup dry vermouth
4 large egg yolks
1 cup (2 sticks) melted unsalted butter or clarified butter
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh tarragon leaves
1/2 teaspoon salt
1/8 teaspoon ground white pepper

In a small saucepan, combine the shallots, tarragon, white wine, and vermouth. Bring to a boil and cook until reduced to 2 tablespoons. Remove from the heat, strain, and cool.
In the top of a double boiler, or in a metal bowl fitted over a pot of barely simmering water, whisk the egg yolks and reduced wine until ribbons start to form. Whisking constantly, drizzle in the melted butter a bit at a time until all the butter is added and the mixture is thick. Remove from the heat. Whisk in the lemon juice, chopped tarragon, salt, and pepper. Adjust the seasoning, to taste. Cover to keep warm until ready to serve. To serve, place in a decorative bowl with a small sauce ladle.


I grilled it this time -- first on high heat to brown all the sides, then lowered down to low heat for like 45 minutes to finish cooking it.

And I cheat -- I use packaged Bearnaise sauce. :p :p
 
Well, I realized Saturday that my mom was feeling kind of sad because my dad isn't here for Father's Day (he passed away a year ago March). So, I invited her over for Sunday dinner. We've just bought a new house and we're still not unpacked all the way but she's been over several times already so no big deal. Until Sunday when my sister called at noon and asked if she could come too. Well, of course, but she's never seen this house yet and I didn't want her to see it looking like a mess so we hopped into hyper drive and got it fairly tidied up!

We had ham, potato casserole, salad, corn on the cob and strawberry shortcake for dessert. It turned out great! I wanted to grill but the propane was at the other house so we had ham instead!

It was really nice and cheered my mom up a lot, I think. She doesn't show her emotions often and I have to remember that if a holiday or milestone is difficult for me--it's WAY more difficult for her and I need to make that extra effort so she knows she's not alone.

Well, let's see here:

DH was out of town the 10 days prior to Father's Day, and he was SUPPOSED to come home on Father's Day. And he told DD1 (5 1/2) that he would be home on Father's Day. DH told me late Friday night that he wouldn't be home on Sunday after all, but would be home Monday instead. I let him tell DD1! She cried.

So to make up for Daddy not being home, I took DDs to their favorite restaurant for dinner: McDonalds.

By the way, DH didn't make it home Monday either. We are hoping he comes home today, but not holding my breath at this point!

This is so unlike me! I had pork tenderloin, baked potatos, grilled veggies (zucchini, summer squash, mushrooms & onions) all done on the grill.

Got a phone call and that was the end of that:(
 
Our's was srumpdidilicious....I made a roast beef receipe from the "Top Secret Restaurant Receipe" cookbook, and let me tell you, I been banging around the ole stove/kitchen for many years, and this is the best and easiest roast beef I've ever fixed!

We had a yummy dinner. My husband made steaks and marinaded mushrooms on the grill, I made poke which is a local fish dish, potato/mac. salad, crab legs, rice, and for dessert we had tiramisu. We had lots of leftovers.

We're going to BBQ tonight... as Sunday was my nephew's birthday and we were not able to BBQ then.


My PLAN is to do steak, potatoe salad, a veggie and maybe baked taters. I wish I knew how long baked taters needed to be on the grill.

I've "pre" baked my potatoes in the microwave before putting them on the grill to "finish" them off. Also, have done that when I don't have a lot of time to bake in oven.
 
Mine went well, I grilled filet mignon, portabello mushrooms and vidalia onions. The biggest hit was a very easy appetizer, I grilled bell peppers and then put them on a skewer with grape tomatoes, fresh basil and fresh mozzarella marinated in a balsamic vinegarette. They were tasty.

DH requested clams for his first course on Sunday. I did him one better... steamer clams! His favorite... and a hard clam to find around here. Best thing was they were only $5.99 per pound. He also requested grilled swordfish and since sea scallops were on sale, I surprised him with a scallop scampi. The kids ate some clams and chicken. They turned up their noses to everything else.

For dessert, I made a low carb crepe stuffed with sugar free vanilla pudding and berries.

I'm DH's favorite wife. :teeth: Only one, too.
 
I made brunch instead and we had a delicious meal of:

=Eggs Benedict (it made DH feel like he was on vacation!). It was my first time poaching eggs and making hollandaise sauce, but it was pretty easy and he loved it.

=French Toast Souffle (really like a bread pudding) with macerated mixed berries on the side. Yummy!!

=Hash browns (from scratch, although DD(5) says she likes the ones from McDonald's better!).

All served with milk, coffe and assorted juices - my FIL said, "Now all we need are some characters and it'll be just like having breakfast in WDW!" I was very flattered!

DS & I took DH out for dinner Mon night. I could tell DS was enjoying having his dad with us for dinner.
