How crowded is labor day weekend?

What I've been reading is that the parks are manageable, but the restaurants are crowded so you will definitely need ADRS for table service meals. I have read a couple of posts that say that MK on the Sunday before Labor Day, especially that night for EMH, is quite crowded. I'm wondering if we should do MK on Saturday and a water park on Sunday. Can't decide.

The crowds are very light, we were in EPCOT last year and the wait for Soarin' was 45 minutes at 2pm. Everything else was essentially a walk on.

Problem is ADR's since it's free dining you have to book very early.

We've done Labor Day weekend at Disney for the past 7 years, and each year it gets just a little more crowded. We definitely don't do the MK on Saturday nor Sunday - too many people. Also, each year I find it harder to find a room - takes a lot of calling and playing with dates.
