I dunno, but the early closing hours is one reason why I usually go for lunch. That way I know the restaurant will open around 11:30am and the wait will be short.
During the busy summer month of July and the 1st week of August they usually stay open until 10pm. It was really neat to eat, then watch the fireworks show. But now it's a USF, so that could change.

If 11:30am is too early, then go at 2pm.
