The crowds are at their traditional lowest and weather is great, typically low/mid 70's day, low 60's night. BUT, it can get cool too. I have been there the past 7 years at that time (hope this year to be 8) and I have seen, and felt, upper 30's a few nights. But most often, low 60's, maybe upper 50's. Have seen a few times lower 80's day, but generally not that warm. And low humidity.
Oh that is our fav week to go! Low,Low crowds, really nice weather- a little on the chilly side in the evenings, but still shorts/shirts during the day (well most days) We really just walked onto most rides.. we thought we had died and gone to Disney Heaven!

Magic Kingdom: 9:00 to 7:00, except 9:00 to 8:00 on the 29th. (The Christmas Party starts at 7:00 on most nights that week.) Note: Park opens an hour early on 30th for AM EMH.
Animal Kingdom: 9:00 to 5:00. AM EMH on Monday and PM EMH on Wed.
Epcot: 9:00 to 9:30. AM EMH on Tuesday, and PM EMH on Friday.
I hear from many friends that its a perfect time to go!! Low crowds, great weather, and you get to see all the amazing xmas decorations! If I wasnt a teacher and could take the time off, this would be my pick! Enjoy!!
When we were there in 2001, it was warmer than expected...in the 80's during the day. The following year I recall wearing a warm coat several days, and being quite chilly at night for MVMCP. Last year I arrived the Tuesday after Thanksgiving, and shorts weather lasted only one day after that, with temps in the 40's several nights. So - you just never know!
