Hopper vs Extra Day

We are looking at 5-6 days in the parks (plus MNSSHP).... not positive yet and realistically only see maybe 1 day where we would want to hop (Animal Kingdom into Epcot for dinner). Is it possible to just 'use an extra day' off your ticket instead of adding the hopper? So on the day we do Animal Kingdom IF we go to Epcot it swipes as a new ticket? It seems like a potentially more cost effective way then adding hopper to the full stay.

No. Multi-day tickets are "days" and not "entries" -- you cannot use more than 1 per day. To hop you must purchase the hopper option.

Above is correct, and not only that, you must purchase hopper for the entire stay even if only using it 1 day (but you may have already known that).
