Honey baked chicken

Does anyone have a good receipe for baked boneless chicken breast with honey? Every receipe i see online has bone and skin. Thanks!!!!
 
I just remove the skin and proceed with the recipe. If there is concern of it drying out, just cover the dish for the first half of the cooking time, and then remove. (Unless the recipe states for it to be covered the whole time of course.) I do this for many recipes that call for skin on chicken.
 
Oh man you asked for my moms specialty....grabbing the recipe for you....

I use boneles skinnless chicken, often times i use strips instead due to smaller appetites. This recipe is for a small square pan of chicken, but when i make it i make it i double teh recipe and use the pyrex rectangle pan.

mix in bowl... 1 cup flour, 1/4 teasp. pepper and 2 teasp. paprika

Melt 1/4cup butter in shallow pan

then add chicken that has been dipped in the flour mixture.

Bake at 350 degrees for half hour.

while its baking make your sauce....1/4cup butter, 1/4 c honey (fresh is marvelous!) and 1/8cup lemon juice. (trick...coat your measuring cup with pam to have the honey come out of the cup easy!

melt all of this together and pour over baked chicken.

put back in oven for 15 more minutes.

This is yummy served with mashed potatos. we use the sauce as gravy.....LOL

That recipe sounds great!! Don't have a book to submit it to right now BUT I was trying to think of a meal to make and drop off for a family who just lost their Mom to cancer -She was young and left children- and wanted something a bit different from all the casseroles they are getting but soothing and this sounds perfect. So think of it as a tribute to fighting cancer. Thank you
 

I wrote it down too - I made sure to write your mom's name so I can give her credit - what a cool way to honor your mom. It looks delicious!
 
You can use the microwave to make the sauce and melt the butter, but cooking chicken in it....i cant ok that. LOL

As for sugar free honey, i believe honey is in a different category than actual sugar. Ask a dietician.
 
are you supposed to cover the chicken when it's in the oven?

the butter in the dish is just so the chicken sits in it in the oven?
 
oh and do you use thin chicken breast? i wonder if i should split the breasts in half so it will cook in the 45 min according to the recipe
 
it doesnt say to cover so i always left it uncovered. Yes the chicken sits in the butter. And my mom always pounded her chicken down. (as a child i refused to eat thick pieces of meat. LOL) so i am guessing that splitting the breast is probably a good idea or just increase the first bake time. The second bake time is mainly just for the sauce.

I agree, this is a great recipe -- I found this in a Mr. Food cookbook (Mr. Food Cooks Chicken).

This was so good!! My girls LOVED it. Thank you for posting your Mom's recipe!!
 
I tried this tonight, and happy to report that all 3 DDs ate it up! This only happens on rare ocasions like Haley's Comet! My DW is looking forward to it when she gets off her 12 hour shift!
