Anyone have a simple recipe? I'm not looking to make 7 quarts or anything crazy... just enough for one meal. We have an abundance of tomatoes and I don't know what to do with them anymore..
Do you have a mill? And what kind of tomatoes? Are they plum?
If plum you don't need the mill I eat those skin on- just chop saute with olive oil and garlic and mash a bit as they soften- you have sauce- sometimes I add a squeeze of tomato paste to it and then a bit of salt and pepper-, if it's too thick I add a bit of wine or pasta water.
really yummy is when we have tomato bacon pasta- fry up bacon pieces- add the chopped tomatoes- tbsp of cayenne cook for 10 minutes mmmm good
If they are general beefsteaky kind- those are harder to use in sauce for me- but my friend puts them through a food mill- then just heats up the mush with the same I did above.
I like the Alton Brown roasted tomato sauce. It has you cook everything in the oven and then turn it into the sauce. This means no stirring and reducing and stirring and reducing and stirring and stirring....
Well, my favorite sauce is to take a large can of San Marzano tomatoes, 1 stick of butter and 1 onion (cut in half, not sliced). Cook for an hour, remove all onion, eat. Mmmm!!! Don't know how you change that with fresh tomatoes tho.
Slice them into chunks and roast them with basil and olive oil and salt.
Then puree them with a stick blender and add garlic, parmesean, and pepper to taste.
