This is one I haven't used, but is very similar to the one I do use....it just has actual measurements.
Homemade Noodles
1½ c flour
1 tsp salt
1 tsp fat
3 Tbl water
1 egg
Make a well in the flour & add egg, salt & fat.
Rub together & add water to form a stiff dough. Knead.
Divide dough into three parts & roll each as thin as possible.
Spread rolled dough on a cloth & allow to dry partially.
Then cut dough into strips about 1½ wide & stack on top of each other. Then cut crosswise into fine shreds.
Or you may roll dough as a jelly roll & cut into fine shreds.
There are then ready to use like packaged noodles.
This is what I use when making Pot Pie (like a stew) - except I don't dry them. I just toss them into boiling chicken stock as soon as they're made.
Pot Pie Noodles
2 eggs
1 c milk
2 tsp salt
1½ Tbl baking powder
flour
Combine eggs, milk, salt & baking powder. Add flour until a dough forms & can be rolled out. Roll out thin & cut into squares. Drop in boiling broth. Boil 20 minutes.
