homemade cornded beef without nitrate

I opened up the magical JP O'Reilly's Corned Beef Spice Packet in the package from Shoprite before I dropped it into the slow cooker so people could copy if they can't find any. Not sure what is in it but I see fennel and the red is hot pepper because I tasted it and I think the broken up leaves are Bay leaves. Maybe I see cardamom shells?

Boil away lil' fella, slow cooker is in the garage to control the flow of smells LOL.

I agree, any of the packaged 'corned beef' products you can buy in our grocery stores comes with a seasoning packet. Clearly you can add other things based on personal preference, but the included packet worth all by itself as well. Having the meat turn an artificial pink/reddish color isn't appealing to me.
