What fills up more quickly during Hollywood Studios morning EMH - toy story mania or rock n' roller coaster?

TSM.
It doesn't have a height restriction, (or a "scare factor,")
so far more guests can ride it.

Definitely TSM. Last trip during emh, I did TSM first then went to rnr and did both within a little over an hour. Your lucky with this will, obviously, depend on crowd levels during your trip

I was hoping to hurry and do TSMM first at rope drop on an EMH day in March, and then meet Chewbacca and Kylo Ren at Star Wars Launch Bay and Groot/StarLord at Walt Disney Presents.

Will the immediate line at TSMM be over 15 minutes? Can I accomplish all three attractions within an hour?

It depends on when you arrive at the attraction entrance.
If you are among the first to get there, you will have no wait-time, as the "line" would be forming behind you.

Fair enough. I'm hoping to be at DHS by 8:15. So we might not be first, but we'll be walking briskly towards TSMM once the rope drops.

The rope will have already dropped at least 15 minutes before your arrival.

There is a truism of AM EMH that says that if you want to get the most out of an (already too short) EMH, guests are wise to arrive well before the AM EMH opens, and then head, with well-planned determination, to the first 2-3 rides of the day.

You're, of course, not breaking any "rules" arriving deep into AM EMH, but you will be losing
a great part of the ADVANTAGE of the (again, far too short) extra EMH time.

By 8:15, you will likely still be able to ride TSM, but you will be behind thousands (yes, thousands) of other guests who arrived before 8AM (and continuing into the 8:00 hour,)
and headed directly to that attraction.

Oh my, I am so sorry! That was a misfire of my brain. I was still typing like it was a 9 am opening. Yes, I plan to be there by 7:15-7:25. Because I definitely realize that showing up for an EMH 1/4 of the way into it would not be worth it.

I'm hoping that doing precisely what you said will let us knock out TSMM and all of the meet and greets first thing -- then start using our FPs at RnRC and ToT.

I'm sure you will laugh at this foolish question. But would it be a really terrible idea to show up around 10-11 on an EMH day? Does DHS still hold a crowd all day or will folks leave midday?

I know conventional wisdom says not to do this, just curious about thoughts.

1. It is not at all a foolish question.
It is actually a very important question in terms of EMH.
2. It is generally considered a poor plan to visit an AM EMH park on a morning when
you will not be participating in the actual EMH.
3. Figure that the AM EMH park will be extra busy that day until late afternoon, at least.
(Not "always," of course, but, in general, expect larger crowds.)
4. There's a reason that it is "conventional wisdom." ;)
