holiday menus--supplement, or only choice?

My sister called DCL to find out about July 4, and was told there is a special menu. The only July 4 menu on Barb's site only has 2 choices--ribs or fried chicken! As opposed to the many choices on other nights.
Is this special menu all that is available, or is it a supplement to the rotation restaurant? I think we'll be in AP that night and I really wanted the grand marnier souffle. Plus not everyone likes all american fried foods.
Any comment from past holiday menu cruisers is appreciated, not just July 4.

Don't worry, that's only a supplement. You are free to choose from the regular menu, too.
