Hi everyone just thought we could all share our favorite holiday recipes.

One of our favorites is Corn Puddin'

one can corn(drained)
one can creamed corn
2 eggs beaten
salt and pepper to taste
sprinkle of nutmeg

Mix all ingriedients together.Pour pudding into the buttered dish and sprinkle with nutmeg. Bake pudding in middle of oven until center is just set, about 45 minutes. Garnish pudding with chives.
350 degrees

I don't care, I would love to hear others! Yours sounds good!

Does anyone have one for chicken and dumplings/chicken and noodles? The creamy kind? I get them at other T-day dinners but don't have a clue as to how to make them.

I'm glad I stumbled onto this thread. I love chicken and dumplings (the cream kind too, Sonya)

Thanks for the tip about the cookbook Herc (but I will have to sneak it in past DH, I always get that warning "if you bring one more cookbook into this house....):o

Yes, we do have a great Recipe Board, and I'm sure you can get a lot of fine ideas over there too.. . :)

Tell you what, since this is a holiday/recipe/cookbook/community thing, I'll leave this here, and I'll also copy it over to the Recipe Board with a link here. . that way you can get replies from both places . . :)
 
Here's my recipe for what my kids call chicken and dumplings. We who are originally from Pennsylvania Dutch country, though, know them as . . .

Pennsylvania Dutch Potpie

(NOTE: I always triple or quadruple this recipe. What can I say!? Family and friends love it. I also cook two whole roaster chickens instead of the 1 or 2 c. shredded chicken the recipe calls for.)

10 to 12 c. homemade chicken broth
1 or 2 c. shredded cooked chicken
1 t. cornstarch

Noodles:

2 c. flour
3 T. butter
1 t. salt
2 eggs
1/2 t. pepper
1/8 c. milk

Begin with noodles. Put dry ingredients in a bowl; cut butter into it; add eggs and milk. Mix well with hands. Roll out dough onto a floured surface until approx. 1/8 inch thick. Use a sharp knife to slice the dough into small rectangles (about 1 inch by 3 inches). Let sit while you bring broth and chicken to a rolling boil. Add cornstarch, stir well. Add noodles, a few at a time stirring well after each batch is added. Boil for 3 minutes after all noodles are added. Turn heat off and allow to sit for 20 minutes before serving. Serves about 10. Tastes even better the next day!
