Basically, it's a story about how dreams can come true. Plotwise, Joseph goes from being the favorite out of 12 sons to being sold as a slave to being the Pharoah of Eygpt's most trusted advisor. The whole movie/show is told in music and song, which makes things a little complicated to understand completely. Joseph and the Narrator travel through his story telling it to an audience, so it kinda sorta breaks the fourth wall. Joseph has this prophetic gift that makes him interpret someone else's prophetic dreams and he tells the person what they mean.
