If you had one afternoon/evening to spend in World Showcase, what would your itinerary be? What would you not want to miss?
World Showcase
Canada-
O Canada- CirleVision film starring Martin Short.
Off Kilter- a unique rock/folk band, very popular!
UK-
World Showcase (Street) Players- (Audience participation comedy sketches) very funny!
British Revolution- a British Rock Groups Tribute Band
France-
Serveur Amusant- a Comical Waiter/acrobat juggler.
Impressions of France - wide screen film
Japan-
Miyuki- Japanese candy artistry
America-
THE AMERICAN ADVENTURE- One of my favorite shows at WDW!
Voices of Liberty- a cappella renditions of the best loved Americana music. Just amazingly beautiful!
Spirit of America Fife & Drum Corps- outside the pavilion.
Germany-
Miniature Train Set (outside)
Wonders of China- Circlevision Film (very good)
Norway-
Maelstrom Ride
Mexico-
Gran Fiesta Tour (Starring The Three Caballeros) Ride (with Donald Duck)

Epcot WS. in general-
Agent P's (Perry the Platypus') World Showcase Adventure-
interactive adventure through one of seven World Showcase pavilions.
Shopping the various wares from each country.
And, the best restaurants on WDW property are in WS!
(Le Cellier in Canada is a personal favorite!)
And, of course, IllumiNations at 9pm (Or "closing time" which can vary during certain seasons.)
Our itinerary mostly revolves around the food. This is what we would have to do/eat in no particular order.
1. Ham & Apple sandwich at Kringla Bakery in Norway, plus go on Maelstrom
2. Margarita in Mexico, plus Mexico ride
3. Crepes in France, plus Grey Goose Slushie
4. Fish and Chips in UK
5. Counter service meal at Tangieriene Cafe in Morocco
My kids would be colouring Duffy all around the showcase.
I'd be sure to just spend a lot of the time walking around and trying some different foods. I would try to see Maelstrom and Impressions de France if you can. Since you'll be there for dinner, what you pick depends on how much you want to spend. I'll echo the other comment that the Tangerine Cafe in Morocco is awesome for counter service. I wouldn't waste time on a sit-down meal since you're only there for an afternoon and evening. I'd also suggest the American Adventure if you have the time. It does eat up quite a lot of time. I'd make sure you go into Mexico to see that atmosphere, though the boat ride is a shell of its former self.
Only one afternoon/evening? So little time! I guess I would:
Start at Canada: Off Kilter - a fun band to listen to and watch. They only perform at set times, so be sure to check the schedule posted by their stage (between Canada and the UK).
Head back to Mexico: Grand Fiesta Tour - cute ride (kind of like Small World). Not usually too busy.
Head to Norway: Malestrom - fun ride, can be busy. I'd grab a FP for this (if the line is more than 30 minutes), head back to Mexico and then ride Grand Fiesta while waiting. Otherwise, head to the Kringla for a snack!
Wander to Germany: Karamel Kuche - I love the caramel corn.
Then head to Italy: look around, see the shops.
Then to USA: American Adventure - this a great show, but it takes up a good chunk of time (45 minutes at a minimum).
Then to Japan: look around
On to Morocco: look around
Then to France: Impressions de France - good movie with beautiful music. After it ends, head to the Patisserie for a snack.
Then end at UK, with dinner at R&C and watch IllumiNations (if you've not see it).
Relax, meander, and always keep your eyes and ears open. World Showcase is the one place in Disney where I feel like a planned agenda isn't even the slightest bit necessary. And I agree with PP's who mentioned the grey goose slushie and the margaritas at La Cava... Just got to try them for the first time, and wow were they ever good.
The acrobat show in the China Pavillion is outstanding!
Find and consume Kaki Gori
It is the one must do for us every trip.
