HHI with one-year old

Hi! Our baby will be 1 when we go to HHI in May and he is our first, so I've never been with a baby. We went to WDW when he was 5 months, which went well because we had reasonable expectations and took it very easy. I'm wondering what HHI will be like and what kinds of things we will do for fun. We've booked a 1BR so we will have a full kitchen and not have to eat out for every meal, but we will want to eat in some restaurants. I'm thinking between the beach, the pool, and strolling downtown, we will stay pretty busy. He currently is still taking 2 naps per day and if that continues, it might limit our ability to do more time-consuming activities. Anyone with experience have tips or ideas? Maybe a dolphin cruise? We normally would kayak, but alas...

We did the private dolphin cruise offered at the resort last year and enjoyed it. Could you rent a bike with an attachment for him and do some biking as well? There is a baby pool at the resort as well, so he could splash around in that.
