I might switch up the Roaring Forks a bit...since you are staying at WL you could head over to Trail's End at Fort Wilderness.
We were at WL for a week in December and I was NOT impressed with RF at all....long waits for very mediocre food...of course the wait time is different if you go at odd hours....

We love LTT for dinner with the charactures, best interaction in all of WDW, imho. I'd probably switch that to dinner and have lunch at Pecos Bills.

Skip the San Angel Inn, if thats where youre headed in Mexico. Jaw dropping bad service.

You must swap out one of your Roaring Forks meals for Whispering Canyon. Loads of fun for all.
