I love parsnips, they are quite common here in England (we have to have them with our christmas dinner). I like them roasted the best or mashed up with my mashed potato.
I'm with Danauk on this - they are popular here and they are wonderful!!! They are best roasted IMHO and I hope you can find out what they are known as more commonly in the US (if that is what is the problem here) because everyone should try them!!

Love 'em! Boil 'em and put butter on them with some chopped parsley. Or mix them with cooked carrots and butter. Either way....they're aromatic and delectable!
I've never tried them. I don't really care for many root vegetables, so I've always assumed I wouldn't like them either. They're not real common around here anyway. My Canadian grandmother eats them.
I have tried them several times and find that they taste like soap. Yuck! I do like turnips and most other root veggies though. My DH likes them, so I will probably make them again for him sometime.
I like them roasting beside a hunk of meat. I will put one when making Chicken Soup. But my fav is a Christmas dish where you saute onion, carrot and parsnips, mix with fish then add a cup of tomato juice and then roast until veggies are just tender! YUM!
They are the secret ingredient (shh, don't tell my wife I am posting this) in her Chicken Soup!!!Golden Brown. I took to them so much I occasionally sing about them...

Needless to say whenever we get together with her family for holidays, they always have plenty of Parsnips on hand for me.
They are a little bland raw, but you just gotta love'em !!!!!!!!!!
