Herbs And Spices.

Which are your favorite spices or herbs? I am looking for food flavoring alternatives to the horrible salt, sugar, and fat standbys favored by the food industry. I do want something that adds taste though and not simply heat. If it burns all the way down, I prefer to skip it because I don't think that there is anything healthy about that.
 
It really depends on what I am making but my favorite spice combination is star anise, cardamom, allspice, and tiny bit of cumin. It works best on chicken or salmon. I also like to combine lavender and sage on chicken. I don't eat a lot of red meat and usually just use pepper when I do make it.
 
Olive Oil and garlic do lovely things for meat and veggies. Olive Oil is the kind of fat bodies need so a little bit each day is a good thing.
 
Rosemary, tyme, basil, oregano are some of my favorite fresh herbs. I try to grow these, but I don't always suceed. Italian basil, I think, is one of my favorites. It has a very narrow leaf compared to regular basil. I have an easy time growing them from seeds, but I don't keep them alive for very long. You can usually find rosemary plants at stores after christmas on clearance.

All spice, garlic powder, lemmon pepper, and beau monde are some of my usual spice jar spices. Although I do like misses dash and weber has a set of seasonings.

I'll still use fresh garlic, lemon, and lime for flavoring too.

Lawry's makes decent marinades, but I also like using vinaigrette dressings, like balsamic.
 

I like pretty much all of the Italian spices, garlic/salt/powder and spicy ones as well. I also use a lot of Cilantro or Corriander and Cumin. Ancho Chile Powder is good, to me, it doesn't have a lot of spice but has good flavor. I think it's from the Poblano Chile which isn't really that spicy.
