Help with low carb lunches and snacks.

I need the help for my DH.
He is a recruiter in the military and so much of his day is spent in his vehicle.
He either goes without eating until he gets home for dinner around 7. Or he stops for fast food.

I tried offering him some suggestions but ran out of ideas.

I need things that are quick, easy and portable.

I know you guys can help me!!!!

I spend a lot of time in my car too, and ate at a fast food restaurant once or twice a day. Like your DH, I would also often not eat a thing until I got home at night, and then I would overeat.

I would suggest he eat a high protien or high fiber breakfast, which will help him feel fuller longer. Plain scrambled eggs are good, as well as cereals like Total, Kashi etc. I know, I hate eating breakfast too, but it does make a difference. The cereals have carbs of course, but if he is on Atkins he can go ahead and have bacon and sausage instead. (Yum) Then pack a small cooler for him - he can still eat in the car, but now he'll have good stuff.

As far as what to pack, I think that depends on how lo-carb you have to get. I often have salads (lettuce, tomatoes & cukes) with oil & vinegar with a can of plain solid white tuna on top. This really fills me up. I also take with me some fruit for snacks or desserts-apples and bananas are good and are low calorie. I also really like nuts, although they are higher in calories they are good for protein and a few really do make you feel fuller.

Whole grain wraps are carbs, but they are better than regular bread and are generally lower in calories than two slices of whole grain bread for a regular sandwich. You can fill them with turkey, lettuce & tomato, or maybe ham, all of which are low carb. Cheese in there is great, but again I'm not sure if dairy is OK or not.

If he likes chili, you can always fill an insulated bowl for him for lunch. You can make it with or without beans depending on the carb/protein requirements.

I also eat a lot of yogurt mixed with whey protien (vanilla flavored) which tastes pretty good, and again, is pretty filling and low in calories.

Lastly, pack lots of water for him. Of course this means more pit stops, ;) but it keeps you feeling fuller and keeps you away from the soda and juices. It took a couple weeks to get used to having water with most meals instead of other drinks, but now I don't even notice.

PS Does he like cold pizza? This recipe was on another thread but sounded good..

"4oz cream cheese
4 eggs
1/4 cup fresh (not powdered) parmesan cheese
pizza sauce or doctored up tomto paste
3 C shredded motz
1/4 tsp garlic powder
Beat cream cheese and eggs til smooth, add parmesan and spce, Spray 9x13 pan well. Put 2 cups of motz in the bottom , pour the egg mix over. Squish around to mix. Bake at 375 for 30 min. spread on pizza sauce,,sprinkle on remaining motz.Add pepperoni, sausage, peppers, mush etc. Bake 10 more minutes until cheese is melted.

Fabulous and NO carbs!!"
 
How about low carb wraps and salads from Subway. Hardee's low carb thick burger is killer. Burger King's bunless Whopper is tasty too. Atkins meal replacement protein bars are pretty darn good. For a snack how about beef jerky, sunflower seeds or peanuts. We make our own terriaki beef jerky at home. MMmmm
