Help with Jan/Feb 2017 Trip (Need to make ADRs Mon!)

HI everyone and thank you in advance for your guidance and wisdom! I really appreciate it.

We are headed to WDW Jan 28 - Feb 4, 2017 with our 2 dds (8, 4) and ds (1). I have two plans for the middle of the week based on TPs crowd calendar but I do not know what to do and easywdw does not have their calendar out yet :worried: . I provided both plans below.

Also some Qs: Do you rec hitting MK and EP for 2 days back-to-back each (See Plan 1 below)? Is EMH at AK/HS a must do with little ones (we will be up and use the benefit)? Is EP/MK with Late EMH an AVOID with little ones (we will not stay late to get the benefit). Any feedback is appreciated!

Note that Sat 1/28 will be arrival and Chef Mickeys and Sat 2/4 will be kids choice and flight home. Also Sunday 1/29 is the ProBowl.

I would not do Plan 1. Can you hold your children happily out of the MK until Wednesday?
 
Did you look at kenny the pirate crowd calendar? some people say that when crowds are low, it's even more important to avoid non-recommended parks. (when it's crowded, it's just crowded everywhere; but when it's not crowded overall, some areas are still crowded)
 

My 180 is tomorrow so I noticed your post. We're going 1/24 - 2/3 (incl. flying days). Yes, it's SUPER ANNOYING that easywdw has no crowd calendars (not exactly his fault as he relies on Disney to give out the info) and even more annoying that dumb Disney tells us to do ADR's 180 days ahead but can't get their act together to put out some pretty concrete schedules (and I mean parades, fireworks, not just open hours). So I called my TA for advice this morning. We're 3 adults so I can't speak to your schedule with the kids but re: meals, she said you can make as many meal res's as you want as long as you remember to cancel the ones you *don't* want later. So you could sign up for several TS meals at different parks and once the schedules come out, cancel the extras. I didn't want to do this myself but I'm making breakfast res's at CP every single day and then cancelling all but one.
Re: EMH's - are you park hopping? The only thing I've ever read was to avoid those unless you're hopping. We didn't hop last time (our first time), nor will we next year, because all I've read is the EMH parks are great the first few hours...and then they get super busy so the smart people leave to hop elsewhere. Good luck!
 
I'm in the exact same boat as you - we arrive the day after you do. It's super frustrating to have to make ADRs Tuesday without a good sense of what will be happening in each park while we're there. Like, we would like to eat dinner at Animal Kingdom and see the MSEP one of the days we're at MK...and I have no idea what the hours will be or if the parade will even be happening when we're there. Right now, I've used the easywdw crowd calendars from last year the same week and basically just crossed my fingers that it will work out. I do like the idea of making several ADRs and cancelling some when more info is out there. Like, we're hoping to eat dinner at Be Our Guest on one of our MK days...I'm going to book it for both nights and I'll cancel one later.
 
We are going the same week as well! In addition to WDW, we are doing 3 days at Universal too and they haven't announced the Harry Potter celebration dates (want to avoid that too) so I really have no idea how to plan..
