Help with ADRs??

OK. I have 4 days left until I make ADRs and I am having a little trouble. I thought by now after reading all these great reviews that I would have a handle on it, and until a couple of days ago, I thought I did. Now we are down to the wire and I am flip-flopping like a politician over this! Let me give you a list of places I have in mind, but first a little history. There will be 5 in our party. Me, husband, 7-year-old picky eating son, my sis and sis-in-law. Now, my sis and I are the only ones who have been to Disney but that was 21 years ago! And we stayed off-site. This time, we are staying on site at POR. I have finally made a decision that our first day arrival, I will make no ADRs for, and we will eat CS twice that day. Why? Because I have no idea how long it will take to get from the airport to DW (our plane arrives at 11:30) or how long it takes the bus to get to our destinations, etc. Oh, did I mention we are going the first week of August (HOT). Well, guess what? It is hot here too and if I am going to be hot, I would rather be hot in DW than here! Ha! So, here are the places we are interested in, with a couple of them a must do:

Ohana (must do)
Chef Mickey's (must do)
50's Prime Time Cafe
WCC
Sci-Fi
Le Cellier-- I know, good luck with that
Crystal Palace (breakfast on last day)
1900 Park Fare

OK. I need to mention that we are not ooo-dee-poo people. We like a good steak, seafood, and good American fare, but we don't want to eat anything too exotic. I am, however, not opposed to trying something new, but keep in mind my picky son. Some of the kids meal choices are grilled chicken strips or mahi mahi. Can I tell you what kind of look I would get if that were placed in front of him? He likes the typical mac n cheese, fried chicken strips or nuggets, fries, hot dog, pizza (I know, real healthy) but he loves fruit!!! So, all you veterans of the World please help! I won't be able to read your posts until late tonight after work and son's baseball game. Any input you have will help. Also, if you have any ideas on the timing of getting around on the bus that would be greatly appreciated too. Feel free to suggest a restaurant you think would be good for us. Looking forward to your help!
 
I really can't help with the restaurant too much I have eaten in 50's Prime Time and they have fried chicken. In my up coming trip I am eating at

Chef Mickey breakfast
Cinderella's Gala Feast 1900 Park Fare Dinner
Donald's Safari Breakfast
Garden Grill either Lunch or Dinner
Ohana for dinner

The bus if you are talking about the Magical Express Bus then it will take about an hour from the airport to WDW. I arrived at 10am and by 11am I was in WDW and my hotel was the first stop it took me 15 min to check in and then I went to my rm and changed and ate by 1pm I was ready to go to the parks.
 
We are pretty plain janes as well. We do not like seafood and prefer just plain and simple foods. Here are some of our favorites:

Chef Mickeys
50's Prime Time Cafe
Whispering Canyon Cafe
Chefs de France (EPCOT - Great FILET!!)
TRex (DTD)
Breakfast at O'Hana or 1900 Park Faire

Some we will do once in a while:

Crystal Palace (dinner)
The Wave (Contemporary)
Tutto Italia (for pasta at EPCOT)

All of these places have good choices for not so extravagavent eaters.
