My DD5 is a certified space nut right now she is very into the planets and all that is outer space at the moment. As for Soarin that is a must do for me since it was my DF's favorite ride. I wanted to mention in case you didn't know this, the gift shop on the way out of M:S has some neat little astronut stuff for sale. It is not made by Disney or marked WDW in any way so it is really inexpensive. I remember seeing sets with the astronauts and space vehicles from $3-8. Thought you'd be interested in a nice cheap souvie for your little one!
Epcot. 
Also, not sure what time but in Japan, there are some drummers that play and that always is entertaining as well. There are I believe koy fish in the ponds of China, which makes for some relaxing family time as well. So much to see and do, I Love Epcot, as others have said, take your time so you don't miss the non obvious things! And if you can make it to Illuminations, that is usually a kid pleaser, least in my family!!
