Help! Pot Luck Side Dish?

Hi everyone!

A night out with old friends has changed to a pot luck dinner and I've been assigned a potato/rice dish. I'm somewhat embarrassed to say I'm more of a baker (the sweet, so bad for you stuff), than a potato/rice maker. :confused3 Unfortunately, they gave dessert to the person travelling the furthest, thinking it would be easier to make ahead of time. So I need help...I want to impress, but don't want to get in over my head. If anyone has a really good potato or rice recipe, please share! You will make my day!

The two that come to mind are Scalloped Potatoes & a cold Wild Rice Salad. I don't use a recipe for the potatoes though. Just slice potatoes into a greased casserole and sprinkle with salt, pepper & flour every so often - like layers. Then whisk together 2 cans of Cheddar Cheese soup with a can of milk. Bake at 350 until done...takes quite a while - like an hour I think. I've also cheated & used the frozen potatoes (shreds or cubes) and that works out fine except it takes longer if frozen.

You know, that reminds me of the Cracker Barrel potatoe recipe. My sister has made that for family dinners, but I don't have the recipe. I'm pretty sure she Goggled it. Or even the potatoes from Cinderella's Royal Table breakfast would be good!

Here's the rice salad recipe:

Wild Rice and Apricot Salad

6 oz wild rice
4 oz dried apricots, chopped
2 oz almonds, sliced or slivered
6 oz yogurt, plain or vanilla
3 oz raisins or Craisins ®
2 Tbl parsley

Make rice according to directions. Cool slightly & toss with remaining ingredients. Chill & serve cold.

This is delicious and I don't think it's too hard, but it tastes like you've gone to an effort. I serve this when I want a "nice" side (and it's really good with ham...)

SWISS SCALLOPED POTATOES
1/3 chopped green onion
1 clove garlic, minced
1/4 tsp. ground red pepper
3 TBS. butter or margarine
1 cup whipping cream
1 cup skim milk
3/4 tsp salt
1/4 black pepper
1/2 tsp nutmeg
2 1/2 pounds red potatoes, unpeeled, cut in 1/8-inch slices
1 cup grated Swiss cheese
1/2 cup grated parmesan cheese

In Dutch oven, saute green onion, garlic, and red pepper in butter, stirring constantly for 2 minutes. Add cream, milk, salt, pepper, nutmeg.
Add potatoes, bring to boil over medium heat and cook, stirring carefully for about 15 minutes, or until potatoes are tender. Spoon mixture in buttered baking dish. Sprinkle with Swiss and parm cheeses. Bake at 350 degrees for 45 minutes or until bubbly and golden brown. Let stand 15 minutes before serving. Serves 8.
 

I am not sure of what the main dish is but potato salad is quick and easy. You could even purchase it at your local deli.

If it's a fall menu delmonico potatoes are a usually a hit.

Or make mashed potatoes w. roasted garlic. Put in a crock pot to keep warm.
 
I like a orzo rice which technically isn't rice or potato but is a starch. Cook it like rice but in broth, and add a carrot peeling into the broth and spinach before cooking. After cooking add some parmasen cheese. If you like this idea I can search the exact recipe, but it is yummy and looks sophosicated :thumbsup2
