Help over EMH hours for late August

I am going in late August and made my reservations for dining with the intention of doing the EMH evening hours (not really late but a little) Now after what I read I am concerned about my plan. Should I change dining reservations to avoid those parks altogether or does it only get bad at night. I have two that could be changed, one (CRT breakfast) that I will not change but will leave park right after if crowded!
