Help needed surrounding dining reservations!

So I am about to make dining reservations for our June trip, and am wondering what to tell them about my food allergies. I was just diagnosed with Eosinophilic Esophagitis, and am aware right now that I am allergic to wheat, and milk. However I am not seeing an allergist for another month, but I could also be allergic to peanuts, tree nuts, different types of meat, and several other foods. Is it possible to call back and get those others added if it turns out that i am allergic to them? I have read several threads about people who have celiac and wondered if the same care would be taken for my disease as well even though it is very rare. Any help would be awesome!
 
i'm pretty sure the same care is taken for everyone. you've got plenty of time to specify your allergies. why not make your adr's now, and then call back once you know specifically what you have to avoid. they don't really need more than a few weeks notice to meet your needs.

You do not have to specify your allergies when you make the reservation. Only state that you have multiple food allergies.

Again, when you get to the restaurant podium, remind them that you have allergies. A chef will come out from the kitchen and go ov er the menu with you. If it is a buffet, the chef will show you what is safe.

In either instance they will often offer to make something special for you. Depending on your allergies, and their extent, you might want to remind them to pleaase avoid cross-contamination; such as being sure to really clean the grill where your food will be cooked.

For counter service there is a book available at each location with ingredient lists. You can examine the book, and also discuss issues and concerns such as cross-contamination) with the restaurant manager.

Although this is true, depending upon the extent of your allergies, some accomodations they might be able to make for you may take a little advance notice (like bringing in an ingredient which they don't normally stock). i think it can be useful (though not 100% necessary) to talk with a chef from the restaurant you're planning to visit, probably at about 2-3 weeks before your arrival, depending upon the season.
