Help! Need recipe/diabetic

I know there are tons of recipes here, and I'm slowly working my way through them, but there's a time limit.

Okay, I asked my friend what to bring for the Halloween party. Friend said, "oh, nothing." Her 12yo diabetic daughter (already on insulin pump) jumped out of the tree and confidentially told me that brownies would be acceptable. :) So I asked, "Real, bad brownies, or the good kind that you can eat?" And of course, 12yo said "The bad ones!" Poor kid can only have one starch a day anyway, so there's no way she could have a brownie and a piece of candy.

I hope to trick her! Help me out. Give me your most sinful, decadent, good for you brownie recipe!
 
My best suggestion is to go get one of the Atkins brownie mixes. They're pretty darn good... fudgy and taste "real".

Most of the sugar-free/flour-free low-carb brownies come out a little off, unless you have specialty ingredients like wheat protein isolate (which I believe is only available on the web at this time), and sugar alcohols like xylitol or erythritol. And you shouldn't feed those to unsuspecting people (as they can have laxative effects).

You may be able to find a diabetic brownie mix, too... I know they have cake mixes... look in the diabetic section of your local grocery store.

I didn't care for the Atkins brownies :( Could you make a "from scratch" recipe for brownies but use splenda, instead? The flour in the recipe would run up her sugar but if she's on a pump it would control it, I think.

I would buy some Russell Stover sugar free candy for her, too. The toffee squares are wonderful and so are the peppermint patties :)
 

If your neighbor's daughter is on an insulin pump, she CAN have the really good brownies. I have two insulin dependent diabetic children (6 and 7) and we will be going to the pump as soon as they are old enough. The benefit of having a pump is that there is much more freedom involved as far as diet and scheduling of meals. Of course, discuss it with her mother. On the pump, she is on a carbohydrate-to-insulin ratio calculated specifically for her by her endocrinologist. When having an occasional treat, it is only necessary to know the amount of carbohydrates in a serving, then bolus insulin according to the amount eaten (done by pressing buttons on the pump - a small computer). It would be extremely helpful (and considerate) if you made the brownies according to the package directions (ANY BRAND - remember diabetic kids want to be, and should be, treated like other children.)
By making the brownies according to package directions, and then pre-cutting the serving sizes (as per package directions) she and her mother will know EXACTLY how many carbs are in her treat and can dose her accordingly.
You are a very good neighbor to be thinking ahead of things like this. I wish you lived near us!!
 
Gardendame, Thanks for the info. Her mom said that Kate gets one treat a day. She is not doing so hot, evidently. I like your ideas about the cutting to appropriate serving size and giving them the nutrition info. I think then they can make their own decisions. My hope was that these brownies could be kind of 'free' so she could have some candy from trick or treating, too. She's 12, and becoming self-concious (sp), so I want to make sure she can eat normally.

Nativetxn, sugar-free candy is a great idea. That'll be her Xmas present. But for halloween we're not doing candy this year. We're giving out 'glow necklaces' so everyone can have one. Easy for us to track them in the dark, too! ;)
