Help! Need no beef, no fuss dinner party dish!

I generally do something I don't need to stand over, like beef in beer or a nice pot-roast in red wine :goodvibes but one couple are non-beef eaters. Can anyone suggest smething that's special enough for a dinner party that can be left in the oven with the potatoes til I'm ready to serve? (I'm rubbish at timings :blush: so we rarely eat each course exactly when I've planned, quite apart from all the chatting)

I can send you a nice recipie for a chicken and red wine casserole? I've made it loads (Despite it not being my own recipie!!).

Very nice! DS(8) loved it :goodvibes Only problem was I had boneless chicken and it was slightly dry - not sure how it would stand up to being lef tin the oven

I always use boneless chicken.... Now I think about it, I often give it an extra slug of wine and stock. Maybe that would help in future? Really sorry I didn't think to mention that!

I usually add more liquid - in fact the wine did probably overglug ;) DH had his reheated because he ended up working late and said it was wonderful (DS(8) is a lazy chewer anyway). I may have fried the chicken too long at the start of course.
