Help! Need no beef, no fuss dinner party dish!

I generally do something I don't need to stand over, like beef in beer or a nice pot-roast in red wine but one couple are non-beef eaters. Can anyone suggest smething that's special enough for a dinner party that can be left in the oven with the potatoes til I'm ready to serve? (I'm rubbish at timings so we rarely eat each course exactly when I've planned, quite apart from all the chatting)

Very nice! DS(8) loved it Only problem was I had boneless chicken and it was slightly dry - not sure how it would stand up to being lef tin the oven

I always use boneless chicken.... Now I think about it, I often give it an extra slug of wine and stock. Maybe that would help in future? Really sorry I didn't think to mention that!

I usually add more liquid - in fact the wine did probably overglug DH had his reheated because he ended up working late and said it was wonderful (DS(8) is a lazy chewer anyway). I may have fried the chicken too long at the start of course.
