I have 3 good size boneless chicken breasts that need to be cooked tonight, but I am a loss for what do with it...any good, semi-quick recipes (under 1 hr.) you'd like to share?

Season them, bake them, and add a fresh veggie, with a potato, beans, or rice side, and a salad. :thumbsup2

cut them into cubes or strips throw them in a pan with butter/marg and garlic cook till they are slightly brown but cooked thru....take off of heat take chicken out of the pan... to the pan(still has drippings in it)add two or three cans of cream of celery/chicken soup ...put back on the burner mix with a wisk till hot( i usally make rice in the microwave when im making this) my dh and dd's love this when i eat it i like my rice on the bottom then chicken with "gravy" on top hth

I was thinking of making this one tonight.....

1 envelope onion soup mix
1 cup water (more if needed)
1 Can cream of celery
chicken breasts, cut into strips
2 cups assorted frozen vegetables, partially thawed
1/4 tsp garlic powder
1/4 tsp parsely

mix together and cook uncovered until chicken is done, stirring frequently

Serve over rice

my favorite is to brown the breast, remove from heat then saute some sliced mushrooms and onions in the drippings. when they are done, add a can of cream of muchroom soup, 1 cup chicken broth and stil til smooth and heated. Remove from heat, add 1 c sour cream to the sauce then put the breasts on a bed of cooked minute rice, pour the sauce over it then bake about 20 mins til heated thru. MMMMMMMMMMMMMm. It's Marge's Marvelous Mushroom Mess and we love it.

Make oven nuggets.

Cut into pieces, dredge in seasoned flour, egg then bread crumbs. Put them on a cookie sheet and cook.

Pan fry in about 2 tablespoons olive oil, garlic, rosemary, and salt. MMMMMMMMM. Serve with a starch and a veggie :). --Katie

Cut them up. Cook them in a skillet. Add a jar of salsa, bring to a boil, then cover and simmer for a few minutes. Serve with rice. That's what we're having tonight.;)

Salsa Chicken: Put them in the crock pot with a jar of salsa, cook for 5 hours (more if frozen)then shredd. Serve over corn, rice and tomatoes, etc. OR make taco soup and serve with tortilla chips.
OR
Chicken & Dumplings: Cook in crock pot with cream of chicken soup, shredd and add a can of biscuits cut into fourths during the last hour.

Chicken Satay without the stick: heat some oil in a skillet, then add some crushed garlic and curry powder for a few seconds to flavor the oil. Add the chicken breast and cook about 7 minutes/side until done.

Serve with a basic peanut dipping sauce made from 1/2 c peanut butter, 1 1/2 tsp soy sauce, 1 clove crushed garlic, 1 tsp lime juice, 1 tsp minced ginger, 1/2 c chicken broth, dash of tabasco and 1 1/2 tsp sugar, blended until smooth.

Steamed broccoli is a good veggie with this--think of it as a little mop for the peanut sauce. ;)

I made chicken and noodles tonight but an easy recipe is pizza chicken. Bake chicken breasts in 350 oven for 30 minutes. Remove and top with pizza sauce and cook for another 30 minutes. Remove, sprinkle with mozz. cheese and bake 5 minutes or until cheese is melted. Delicious and EASY!

Cube and boil chicken. Drain and mix with
small carton sour cream
can of cream of chicken soup
Spread in casserole dish and top with crushed Ritz (or similar) crackers. Drizzle melted butter on top and bake at 350 for around 30 min.

I know it is too late but a very simple recipe for a quick chicken dish is:

Italian Chicken

Place chicken breast in baking dish and pour Wishbone Italian dressing until 1/2 way covered. Bake at 400 degrees for about 40 minutes or done to your liking.

My kids gobble this up every time and actually beg for it most nights. We pair it with some corn & a salad. Super simple and very yummy!

My son's favorite is to bake the chicken, make some minute rice and cover with a bottle of queso cheese. sometimes add some broccoli from freezer. takes about 30 mins total.

I've been buying bags of frozen chicken breasts on sale and cooking the entire bag in my crockpot with some water, salt, pepper, and garlic powder. When it is finished, I shred it and freeze it in one cup portions to use later. This saves me a lot of time and the chicken cooks perfectly in the crockpot.

3/4 cup water
1/4 cup olive oil
4 tbsp Montreal Chicken seasoning (I get mine in bulk from Costco)
2 tsp ground sage
2 tbsp white wine vineger (or any vineger you have on hand, really).

Shake it all up in a container (tupperware etc.) and then marinade chicken breast several hours to overnight. Grill and serve with starch/veggie. I'll grill up 8 at a time and have them as leftovers all week during the summer when it's too hot to cook every night. I'll also bake whole potatos on the grill and will make 6-8 at a time and re-heat those during the week too. It's easy, cheap, healthy, saves time, and doesn't heat up the kitchen.

quick chicken & dumplings:
Boil the chicken, then cut into chunks. Reserve enough of the water to just cover the chicken chunks. Pour 3/4 of a 1/2 gallon of milk in, then add 1 stick of butter. Season to taste. Once it is slowly boiling add 1 can of cheap biscuits (cut each into 4). Stir and cook until the biscuits are cooked thru. Serve with a veggie. If you don't want to add the biscuits, add frozen veggies to this and bake the biscuits on the side. Serve as a mock chicken pot pie! Yummy!

i call this chicken bake

cook chicken in a skillet add whatever seasonings you like

cook a box of ziti drain and place in casserole dish add chicken top with one can crushed tomato's and cover with cheese bake 350 for 20 mins or so

Thats tonight's diner

Chicken pot pie/& biscuits? I cube it, cook with salt & pepper, add one cubed potato (small pieces) and add one can cream of chicken soup or cheddar cheese soup. Cook 10-15 min. Add frozen veggies (I usually do 1/2 bag-3/4 bag). Then add enough milk to get to desired consistency. Cook for a few minutes till well blended and veggies thawed. Top with biscuits. Bake at 425 till biscuits are done. About 15 min.

One of my DH's favorite meals came from a similar situation. Cube chicken. Cook w/ a little olive oil, s&p and garlic. Add minute rice, and required water (says on box) and some frozen veggies. Add any spices or herbs you like. Imo, this is bland and not my favorite meal, but my DH loves loves loves it.
