Hi. DD17 told me this morning that her and her boyfriend will be home after work, of course that means for supper. Pluss there is DH and DD13. I don't know what to have easy for supper, that everyone will like.

Pizza night - done 1 of 2 ways - buy out from local place or...

For something funner "Make your own pizza night" - pick up some favorite toppings at the store - cheese, onions, mushrooms, peppers, pepperoni, sausage, black olives, whatever you know they like and get either already prepared frozen/deli cheese pizzas to add toppings to or just the dough and have everyone make their own pizza, 1/2 a pizza, 1/4 a pizza depending on size and how many you get. You could even do individual size by using english muffins, buy a bagged salad mix and your all set

Tacos are quick and easy, and most people like them.

Easy chicken and cheese quesadillas (recipie to follow) with Rice-A-Roni Mexican Style rice and refried beans.

Chicken/Cheese Quesadillas the Easy Way
1 can chicken, drained and flaked
1 container of 'garden style' cream cheese (has onions, green peppers, etc in it)
1 bag of Mexican Style shredded cheese
1 bag of flour tortillas

Using your hands (or a mixer, if you're squeamish), mix together all ingredients except for the tortillas. When all ingredients are thoroughly mixed, use a spoon to place 2 tsps of the cheese/chicken mixture on one half of the tortilla and fold in half. You can bake them in the oven or on the George Forman (which is what I do) or, if you really want, you can grill on the real grill. Heat until warmed through, slice in to three pie like wedges and serve.

This is a favorite in our house, we have it at least 2X per month.

It might be too soon after Thanksgiving for this, but it's quick, easy, and everyone likes it.

Make a box of Stovetop stuffing for chicken. Pound boneless chicken breasts to flatten them a little. Put a few spoons of stuffing in the chicken breast and roll it. Place seam down in baking dish. Cover with chicken gravy. Bake 350 about an hour.
