For the way there we plan on leaving the house around 3am and arriving in Orlando, hopefully no later than 2pm the next day. Now for the way back... I'm not sure what time we should leave... And where to stay on the way back. I kinda want to spread the driving out over 1 more day, as I'm sure we'll be tired!
Any suggestions?

My suggestion is to spend the last morning at a park then leave the Orlando area around 2 pm. Then drive as far about 8 hours until about 10 or 11 pm and start out again the next morning for home...

We're driving down and back and taking two nights both ways....we did the one night drive last trip and were all so tired/groggy it just isn't worth it to us. I do work in a hotel though, so I get a pretty good employee rate that helps with the cost.

Our trip home we are stopping in McDonough, Georgia and then in WestChester Ohio. Both days are about an eight hour drive, with only 5 the last day till we get home.
Drive to Flordia we stop in Corbin, Kentucky and then Tifton, Georgia

If you are leaving Ontario...don't know exactly where...and driving straight through you are going to arrive in Orlando somewhere around 2-3am. It's 21 hours on the road..from Oakville...plus stops. It usually totals about 24 hours.

On our trips home we leave as early in the morning as possile. Then drive until about 9 or 10pm. Last year we had planned to leave the resort at 5:30am but DH woke up at 3:30am and decided we should leave. We had already packed the large bags in the car before we went to bed so we got up got dressed and rounded up the last few things...then hit the road. We made it to Grove City, PA around 10pm. We couldn't get a room so we carried on to Erie and still couldn't get a room. So we ended up going home....we are only 3 hours from Erie....we arrived at about 2:15am.

I prefer to drive as far as possible on Day 1, leaving Day 2 easier (less pressure).

In March, we left WDW @ 6:45am (after packing the car the night before), arriving in Cranberry Township, PA @ 1:00am the next day. This made the drive home to the GTA easy the following day (or later that same day, since we arrived at the hotel @ 1:00am).

.

That's my policy too....I actually hate car trips so we have to make the first day as long as possible. If I had to sit in the car for 2 or 3 days 8-10 hours each day I would need either a rope or some serious medication.
