I calculated that my first day that I can start reserving ADRs is 11/14/22.
How likely will I be able to get Topolino breakfast and Space 220 lunch or dinner ?

Your trip is long enough that you should be able to get those if you plan late in the trip.

60 days before 1/15/23 is actually 11/16/22.

As PP noted, if you put the harder to get reservations later into your trip, you should have no issues making ADRs.
