Help me make the most of my OBB

Our first cruise is coming up soon and I know I want to book on board for Alaska for 2016. I THINK I want to book concierge for that cruise, but am I better booking the date I want with a dummy room or going ahead and booking the room/date we want even though the concierge deposit is non refundable? Am I even making sense at all? Basically, I just want to secure the OB credit and discounted deposit, but does that even apply to concierge bookings?

And I am checking other lines for the same time frame. Circumstances in our lives are such that in order to have my husband join us on a vacation, we need the extra room/privacy (ability to get away from crowds)/priority boarding and such, so if you have other suggestions for lines that do that really well, I am open too.

The onboard booking offer is only valid for category 4-11 stateroom and specifically excludes concierge-level categories, IGT, OGT and VGT categories with restrictions as well as short 2-night sailings.
