HELP me decide what day for CP!

Help me out fellow Dis'ers!! I can't decide what day to eat breakfast at CP.

Current plans are:
Saturday - Rainforest at DTD (no park)
Sunday - none, going to AK
Monday - Akershus lunch, obviously Epcot
Tuesday - MK, CP breakfast has opening at 10:20
Wednesday - SciFi lunch
Thursday - none, CP has breakfast opening at 10:15. Also this is AM EMH at MK.
Friday - none, CP has breakfast opening at 10:20

So which day would you pick for the CP breakfast? My sister and I want to
go to MK on Thursday morning, even if it's just the two of us. I don't know if everyone else will join us for the morning hour or not.

My concern is if we pick say a 10:20 seating, will we be rushed?

Tuesday at 10:20 sounds like the best plan. You can get there at rope drop, go get fast passes, ride something, then have breakfast. It's also possible that something earlier will open up between now and your trip, so keep checking back. You will already be at MK that day, so why spend time going back and forth on another day.
