Getting ready for my trip in November and my family has chosen to do Cape May Café. I am a vegetarian and my two boys age six could really care less. I’m thinking for the price I have to pay I’m not gonna get my moneys worth. So I was thinking of splitting apart from the group and going with my two boys somewhere either in Epcot or Hollywood studios or Disney Springs. Are there any quick service options you could recommend? Or maybe a table service that is easy to get a reservation for.

Teppan Edo in EP is usually easy to get an ADR and I believe they have a vegetarian option.

If you're kids do Mexican, the QS, La Cantina in Mexico is also pretty good.

If you can get an ADR, Hollywood Brown Derby, Sci-Fi or 50s Prime Time in HS would all be fun too.
 
I'd suggest Sunshine Seasons in EPCOT's The Land Pavillion. Great options there. Also, will you be there during the Food & Wine Festival in EPCOT? Lots of vegetarian options at some of the food booths. If you haven't experienced an "impossible burger", the Earth Eats booth looks like it will have it as an offering. Fully plant-based burger. Delicious. Have a great trip!
 

I really enjoy the veggie platter at Tangierine Cafe in the World Showcase.

I second this. Love Tangierine Cafe! If you'd rather do a TS, take a look at the menu at Spice Road Table. The food is great and it's pretty easy to get an ADR. We usually do it as a walk-up.
 
Beaches and Cream - a very short walk from Cape May. Typical diner fare, grilled cheese sandwich, tomato soup, fries, ice cream, shakes.
The Fountain - over at Swan and Dolphin, also has diner fare.
Woody's Lunch Box - new place at Hollywood Studios, Totchos, grilled cheese, soup, macaroni salad
Sunshine Seasons - Epcot, they have a lot of options all in one place, I'm sure you could find something there.
 
Another vote for EPCOT.
Although I am not vegetarian I regularly choose veggie food.
Have lots of choice at the French Boulangerie (I had a lovely tomato and mozzarella with pesto baguette) and if you don’t want cake pop and have an ice cream macaron next door.
Found the vegetarian option at Morocco a bit dry but loved the meal I had in Japan and Mexico. Sunshine seasons is a good choice too.
Was decidedly underwhelmed by the cs at yacht and beach and don’t recall if there was much vegetarian choice at Big River Grille which we did enjoy although YS you don’t need to book in advance.
 
Since its so close, Epcot is definitely a good bet. As others have suggested Tangerine Cafe is one of the best QS places on property. The QS in Japan (forgot the name) is also quite good though I'm not sure what their vegetarian options are.
 
I don't know how hard it is to get an ADR, but Via Napoli may be a good option. You and your boys could split a pizza. If there isn't anything available, you could try Reservation Finder or Mouse Dining.
