Help me decide on ADRs

I have my ADRs booked for our end of May trip but am thinking about changing things up. It will be my mom-69 and I for 4 nights. DDs-18 and their friend-18 are also going but staying at a different resort and doing different dining. They chose and are happy with their plans.

My plans:
Day 1- Arrive around 12-12:30 (staying at AKV). Plan to go to Epcot for Flower and Garden booths for lunch and then FP+. Dinner at Tutto Italia at 7:30. **thinking of switching to Sanaa this night.

Day 2- Maybe back to Epcot for Flower and Garden??? Or HS or MK??? Dinner at Whispering Canyon at 7:00. **thinking of switching to Trattoria Al Forno (must do an Italian place one night as my mom loves Italian).

Day 3- AK with FP+. Dinner at Sanaa at 6:30. **will cancel since switching to day 1 but not sure what to book and may wing it with no ADR.

DAY 4- MK with FP+ and dinner at Ohana with DDs and friend and then back to MK for late EMH.

Departure day....Boma breakfast at 10:15 then ME to airport around noon.

Basically switching from Tutto to Trattoria. Might be best not to have to linger at Epcot from 1pm to dinner at 7:30. My mom's stamina might not be that long so I can see doing booths from 1-2 and then FP+ 2-3 and 3-4 and then being ready to leave shortly. Maybe walk through Seas to see Manatees. Definitely could be done by 5. But not hungry yet so go back to resort and have 7:30 dinner at Sanaa. Then on day 2 we can decide what park since ADR at Trattoria is out of park. But would you do Trattoria over Tutto? I haven't been to either. For what it's worth, my mom is more of an American-Italian lover.
 
I like your idea of back to your resort and Sanaa.
I am very close in age to your mom, and for some unknown reason Epcot totally wipes me out! Especially after travelling I think your idea to hit your resort for dinner is smart. Mom can go back and recharge and then sit down to a lovely meal without having to make it back by bus to your resort.
imho that's what I would want...
I haven't any other ideas about Tutto vs Trattoria, I'm sure others will chime in!

Also, there are 2 really great restaurants in AK, 3 if you count Flame Tree Bar-b-cue counter service.
Tusker House is always always a win for us and your mom may enjoy meeting Mickey and the gang. I noticed you have no character meals, so maybe not?
The other excellent choice in AK is Yak and Yeti.
So on AK day I would absolutely eat in park!

Thank you for your help. I will switch and have Sanaa the first night and then do Trattoria the next night. I am thinking Trattoria would be more appealing to her anyway, from what I've heard about it. AK day we may do Yak and Yeti. It's one of our regulars and my mom has been before too. My DDs and their friend are eating there that night. Or we might go to AK earlier and then go back to resort to rest and do dinner at another resort or DS. Trying to think of places she (or I) haven't n't been to. Maybe Boathouse, Grand FL Café, the Wave. Could leave off ADR and just go on app that day and see what's available.

i would definitely book ADRs for your AK day...
if it were me, i'd book lunch at Tusker House and dinner at Yak&Yeti...
or vice versa - either way works, since Tusker House has characters at all 3 meals...(but i'd go for either lunch or dinner, not breakfast)..

Tusker House is a nice buffet with good food and has great character interaction with the original characters..
Yak & Yeti has good food in a pretty restaurant...
