Help Me Creative Ones!

I am mildly crafty, I cannot hang with the likes of this board though! I want to create something great for my niece and nephews for their trip to Disney. I was thinking a journal or a small gift basket with some stuff to do in the car, kind of thing.........

I would like to theme each one in a different character for each child and personal anything I can with their names. Any ideas?

I need to come up with 6 of something as follows:

Niece:
Abbey - 11 years old

Nephews:
Nicholas - 13
Patrick - 9
G - 7
Mitchy - 6
Benji - 3 1/2

Any help would be appreciated more than you can imagine!
