Help!!! Low cholesterol dishes

My Ds, lovinely refered to as "the old guy" got the results of his physical back. Unfortunately his cholesterol is really high. :guilty: He's also has a lot of the "bad" groups. He's overweight (~20-25 lbs), over 50 and a minority. So he brought home a "foods to avoid" list. Of course it has every thing we love to eat.

  • No meat from 4 legged animals (beef,pork, veal & lamb) more than once a week.
  • No milk products whole milk, ice cream, yogurt, cheesees
  • Breads & grains. Any baked goods with shortening and/or sugar. Commercial mixes with dried eggs and whole milk. Avoid sweet rolls, doughnuts and breakfast pastries.
  • Fats & Oils. butter, lard, bacon drippings, gravies and animal fats. No cream sauces.

There are other things also. :sad: Help, this is probably my entire cooking diet. I have 3 teenagers at home, I'm never going to make it eating fish 6 days a week.

I need help dissers. Any websites, cook books, cyanide (only joking) you can recommend.
 
I would recommend taking a look at weight watchers cookbooks. Very healthy (and yummy) recipes with great nutritional values. I'm supposed to be following a "heat healthy" diet so I'm familiar with that list. It was hard to give up so much of that but you can still have some on occasion. Just have it once in a while and sparingly. They don't need to be completely cut out. If they do, than I would go see a nutritionist for that.
 
Chicken is your friend :) Breast meat, skin removed, of course.

Pork tenderloin, trimmed of visible fat, is also your friend :)

Fish is wonderful. My doc says shrimp is okay, too. My cholesterol was through the roof when I omitted shrimp from my diet. I put it back in (in moderation), cooked in healthy ways, and my cholesterol numbers turned amazing.

I'm also surprised your doc put "grains" on the list. Grains are fine. White foods are not. Whole wheat pasta (but it's really gotta be whole wheat) is okay, beans, legumes, oats (again, whole-type oats) are fine.

Exercise. Not necessarily weight-lifting. 30 minutes of cardio five days a week. There's something magical about 30 minutes and cardio.

A daily glass of red wine will also be his friend if his HDL is low. Other types of alcohol will slightly raise HDL, but red wine will offer the best results. (Remember, HDL is the good cholesterol, and we want that number high.)

Fish oil caps. I lowered my triglycerides over 400 points with fish oil, diet and exercise. Never needed statins, niacin or anything other "med."

Weight Watchers is awesome! "Simply the Best" are by far the best cookbooks. You don't need to go to meetings to "get it." Very nice way of eating, very balanced.

This is doable! Y'all might actually enjoy the new way of eating. Prepackaged/uber-processed foods will have to go bye-bye. But fresh is fine :)

Also, reduced-fat dairy is okay. Opt for skim milks/yogurts and 1% or 2% cheeses. If you must use full fat cheeses, use strong ones so you don't have to use much. Like a touch of parmesan on something instead of a lot of mozzarella.

I keep forgetting stuff. Please ask questions!

About fats: They're not all the same! Learn about your fats. Olive oil and monounsaturated fats (avocados, for instance) are very heart healthy. Nuts are very heart healthy. Canola oil is okay, too. Use butter sparingly, and no bacon fat or shortening.
 
get some steel cut oatmeal and have him eat it every morning. Get egg beaters; they're not so bad and you can do some cooking with them. OR - I separate the yolk from the eggs in two of my eggs out of three when I make scrambled or omlets. It's the yolk you want to avoid -the white is fine. High fiber, low fat. Skin your chicken. Learn to use spices like cumin, curry, cinnamon, clove, Mrs. Dash : stuff that won't make his blood pressure go sky high because he'll start leaning on salt if he can't have fat and salt is baaaad. Stir fry with chicken and lots of great veggies. Buy extra virgin olive oil. I use one of the no cholesterol butter substitutes for about half my cooking. I HAVE to have butter sometimes. If he doesn't really lower his cholesterol for the next check up, his doctor will put him on meds. That will be necessary to keep him from getting sick because of the high cholesterol.

Start taking walks and stretching together.

The milk thing. Gradually lower your fat intake by getting 2%. Don't just go cold turkey to skim if you can't stand it. Or mix skim and 2%. We solved the ice cream problem by getting sorbets that have no fat but ARE high in sugar so don't go crazy. I also get lowfat yoghurts, remove the lid and put them in the freezer for about an hour-stick a popsicle stick in them then continue to freeze them. Freeze overnight, then you can peel the plastic off and eat it on a stick. It's a pretty healthy ice-cream like snak and better for you.

My doctor told me to make a change every three days-a major change. He said I wouldn't feel so bad if I didn't just go crazy and stop every single thing I was doing wrong. He was right. I made a list and gradually implemented everything I needed to do. Once in a while when I'm out, I eat something not so healthy. I don't bring these things into my home though where I could eat lots of them. We like salmon, swordfish, and that fake crab stuff. I don't eat 6 fish meals a week but we do take fishoil capsules and I put Flax seed on or in some of my recipes. Every little thing you do or change will help. Good luck. there are some good recipes over here at the recipe board......I also have high cholesterol and high BP and also diabetes.......I had the help from a diabetic educator at the hospital. That is also a good place to start for help...
