I'm so confused.

The brochure says 3 meals with 1 table service meal and I child table service meal and a quick service. Does that mean that I would have to order from the children's menu for a meal?

Also since there are 2 table service meals for 1 day can I use those at Le Cellier which now requires 2 tables service credits?

I'm having trouble seeing the difference between the regular DDP and the DXDP. If the only difference is the child table service and we have to order from the children's menu then it isn't worth it at least to me.

I could have it 100% wrong though and that is why I'm asking for help. Thank-you!

The basic (regular) DDP provides each guest 1 TS, 1 CS, and 1 snack credit per night of your stay.

The deluxe DDP (DxDP) provides each guest 3 meal credits (which may be used at TS or CS) and 2 snack credits per night of your stay, plus one resort refillable drink mug per person.

All of your credits are allocated on check-in, and are good until the midnight that follows your check-out -- you may use them at any time and in any order.

So then if I reserve Le Cellier on a Friday, I can use 2 of my credits and have 1 left, right. Please bear with me. We decided last night to schedule a last minute trip and I was up until 4 trying to sort out plans so I'm loopy.

A dinner at Le Cellier would cost each guest who ordered a meal 2 TS credits (on basic; 2 meal credits on DxDP) if you use the dining plan to pay for the meal. On basic, that would be two night's worth of TS credits for that meal; on deluxe, it's 2 of your 3 credits for a single night's stay.

Broken down more basically... let's say you're a party of 3 (2 adults, 1 child) staying for 4 nights. On basic DDP each adult gets 4 TS, 4 CS, and 4 snack credits, for a total of 8 adult TS, 8 adult CS, and 8 snacks, and the child gets 4 TS child credits, 4 CS child credits, and 4 snacks. (Snacks are not broken down adult/child.) From the time you check through the day you check out, you can use those credits any time you like.

On DxDP, that same group would get 12 meal credits and 2 snacks per person, for a total of 24 adult meal credits, 12 child meal credits, and 24 snack credits. (Plus the mugs.)

If you're going to average 1 sit-down meal a day and 1 counter service per day, then DDP (or no dining plan at all) is the most likely option. If you want at least 2 sit-down meals a day and/or plan to do a fair amount of signature dining and/or dinner shows, you probably want to consider DxDP.
