Help - I am ipod touch ignorant!

You have to store your purchases in iTunes on your computer. iTunes/Apple does not have cloud storage for iTunes purchases like Amazon has recently come out with.

You download thing to either the iPod or the computer (iTunes), then you sync the two together to add/delete content, but you keep that content forever. You cannot download the same music/movies more than once. Apps you can download multiple times.
 
You store everything you own on your iTunes library - that's the key word - it's the library. So if you have a small library and a bigger iPod touch, you might be able to keep everything on the Touch at one time. But you still need to keep it in your library to keep it forever - on the computer. That way if something happens to the Touch - it really breaks, gets lost, etc. - you still have all the items you purchased. Keep in mind that for most people the value of the iPod is NOT the device itself, but all the media that you have that you put on it.

If you have more in your library than fits on the Touch, you pick and choose which things you want on the Touch and copy them there. Later, you sync it again and you might delete some things and add some new things that you have added to the library.
 

To make it a little clearer...Once you buy something from Itunes, it is yours to keep forever. The trick is backing up onto your itunes library. Once you put it on your Itouch, it is only on there, then when you back up on your computer, everything is on there as well. So say, she buys Beauty and the Beast and watches it on her Itouch, then she wants to buy Cinderella, if she doesn't have room on the itouch to hold both movies, she can delete the movie from her Itouch (It is now on the computer backed up), and she can keep Cinderella on her Itouch. Next time she backs up, she will now have both movies on the computer and if need be, can delete them from her Itouch to make room for more. It is the same premise for songs. Also, if you have an Itouch, Iphone, Ipad, Mac computer, you can access everything you paid for on itunes from any of those devices. So if you went on your Ipad, and clicked on Itunes and tried to watch Cinderella on there, you would go onto Itunes and click on purchase for the movie, once you click on that, it will say that you've already purchased this item, and you will not have to pay again. Hope this helps you understand a bit better.

Let me just add in - you need to back up everything she purchases not only to a computer but to another storage option. Look into buying a portable hard drive or using one of the online back-up services.

Eventually over the years she is likely to accumulate hundreds and thousands of dollars in digital media. If they only place she has it stored is a computer that suffers a crashed hard drive, you are at the mercy of Apple (or wherever you bought it) to replace it for you, and they can be very prickly about that. Get her into the habit now of backing everything up.
 
I also think the 10 hours of video might be battery life? I know my Ipad has at least a dozen movies on it, with some music and pictures and games, and I am at about 32GB full.
